Red cabbage, one Boskop apple and lots of horserad Red cabbage, one Boskop apple and lots of horseradish. About 1000 grams of stuff to ferment. I added one tablespoon of salt, kneaded like crazy and put it topped with a pickle weight into a bail top jar. I will give this wild ferment six weeks.

Wild fermented tomato salsa. It took four days to Wild fermented tomato salsa. It took four days to become visibly active (third picture). The whole salsa is on the rise. Happy bubbles are everywhere and at the bottom of the jar one can see pure brine. When I open the jar today it will make a little #pffffftt.
